Garlic is one of the absolute essentials for pizza — used to flavor the dough, sauces, fillings and toppings. Fresh garlic is the only game in town — using garlic salts, powders or flakes is way down on the roster. The tastes of these imposters are inferior, and they are harden to digest, more expensive, and are known for unpleasant aftertastes.

How do you recognize a good garlic? The bulb will be large, smooth, flawless and rounded, with well-developed individual cloves. Now you’ve bought it, what do you do with it?

Separate and peel the cloves as you need them. (Hint: Tapping with the flat side of a knife will loosen the skin.) The surface area revealed determines the strength of the garlic when used. Finely minced garlic is much more potent than thicker slices. For the biggest flavor punch, crush the clove with a knife — or better yet, use a garlic press, which releases all the flavorful oils effortlessly.

A word of caution: That little garlic clove has a super strong flavor — a perfect example of the “too much of a good thing can be bad” theory. Garlic has been used for centuries to ward off disease, but if you use too much in your kitchen creations, your garlic will ward off more than disease!!

Troubled by the lingering garlic odor on your hands? Rub with ordinary table salt, then rinse under cold (not hot) water.
